Kosciusko Chamber Welcomes Blue Sky House Of Pancakes And Restaurant

PIERCETON — Bernardo Velazquez said he’s happy to provide a new restaurant in Pierceton.
Velazquez’s Blue Sky House of Pancakes and Restaurant opened at 118 N. First St. on July 22. The Kosciusko Chamber of Commerce had a ribbon-cutting for it on Tuesday, Aug. 19, the date of its grand opening.
Manager Liz Dominguez said Velazquez had several other locations for the business and wanted to open one “close to Warsaw.”
Velazquez said opening Blue Sky was “a dream” of his.
He’s using his 25 years of restaurant experience in running Blue Sky.

The name is connected to the Sunrise House of Pancakes and Restaurant in Walkerton. Velazquez said his son wondered when he would open a restaurant with the similar name of Blue Sky.
Seven employees run the Pierceton restaurant.
The menu includes breakfast foods like omelets, eggs, pancakes, waffles, biscuits and gravy and French toast as well as chicken. Velazquez said the restaurant is trying to serve fish on Fridays.
“I know I have good food,” he said.
He said he tries to ensure people have good dining experiences. Velazquez said he was thankful for the support thus far.
Hours are 6 a.m. to 3 p.m. seven days a week.

People packed the restaurant for its grand opening.
