WACC Hosted Leadership Showcase
WARSAW — The Warsaw Area Career Center hosted a leadership showcase Wednesday, March 23, for the Family, Career and Community Leaders of America and ProStart students who missed out on the state leadership competition due to a snowstorm and school cancellations.
At the Blue Apron, culinary arts students, Cody Jefferson, Isaac Netzley and Makylia Hilliard prepared a three-course meal for judges from local restaurants: Jose Espinoza, Redwood Grill; Scott Wood, Noa Noa; and Neil Park, Cerulean.
The culinary students had a total of 1 1/2 hours from start to finish to prepare the meal and to complete tasks the judges assigned them in chicken fabrications and specific four-point knife cuts. The chicken fabrication and knife cuts are 15 minutes. Then they have a 20-minute cleanup. The table is reset by the students and the one-hour clock set as the students begin to prepare a three course meal, while the judges watch. Students are only allowed two butane burners.
The students write the recipes, using standardized format, and price the menu. Chef Mark Bragg, ProStart advisor, says this is in the ProStart curriculum.
Outside of the Blue Apron, the FCCLA presented projects student leaders planned and prepared things they care about. Some of the projects presented was a focus on children by Allison Loy and Morgynn Summers (who won silver medals), climate change by Estefani Ramirez (gold medal) and an presentation on pediatrics by Reveca Moyotl (gold medal).
Qualifying students may be able to attend nationals in early July in San Diego, Calif., along with being awarded possible scholarships for their work. There are 30 ProStart teams, between culinary and FCCLA, over the state of Indiana. If the students win in culinary they get to go to national ProStart in Dallas, Texas.
