Curbside Offers A Different Lunch Atmosphere
WARSAW — Nestled next the old train depot off of Lake Street in downtown Warsaw sits a small trailer that is serving up large flavor all summer long. Curbside is back to offering gourmet street food from 11 a.m. to 2 p.m. Tuesday through Friday.
Gabriel and Kammi Rager originally opened Curbside in 2012 after working on their dream for a while. Curbside began its life as a pop-up trailer that sat in their backyard for around two years before Gabriel started completely changing the look and purpose of the trailer.
“We completely gutted it,” said Gabriel. “It started as this big yellow box. It wasn’t very attractive.”
Curbside had a soft opening in 2012 and their first full summer season in 2013. For 2014 and 2015 the couple changed their business plan to only catering private events and opening for large community events. After a lot of consideration, the couple decided to open Curbside back up for the 2016 summer.
The small trailer serves flatbreads as the main feature. There are a few staple flatbreads that are always on the menu, like their sausage flatbread, but Gabriel is constantly coming up with new recipes to feature. Curbside also always has a vegetarian option on the menu and Gabriel is able to make meals gluten free by serving them on top of a small salad instead of the flatbread.
Gabriel and Kammi run Curbside together. The advantage to having a lunch stop ran by two people is that they take it upon themselves to get to know all of their customers. Regular customers can often be seen waving from car windows as they pass by or excitedly approaching the trailer.
“Those connections start by having people that become returning customers,” said Kammie. “It’s a revolving process that is really exciting and energizing.”
Curbside will remain open for lunch for the rest of the summer. Along with being able to try a flatbread between 11 a.m. and 2 p.m., customers can also book the Curbside trailer to come to private events or parties. Gabriel and Kammi hope to expand Curbside in the future and their ultimate dream is have a fully-functioning restaurant, a brick and mortar.
